HOW TO MAKE 30 MEALS IN 30 MINUTES [FOR THE BUSY MOM]

Well, if you consider a delicious burrito a meal...AND I DO. I'm by no means a chef, but I've been told by my husband that every day someone at his work asks him where he went for lunch..."because it smells intoxicating." These burritos are healthy, cheap and most importantly...quick to make! [which is perfect for a new mom who has no time anymore...and can't go to Chipotle because she doesn't like eating her food with a side of e-coli.] So lets do this...Breakfast, Lunch AND Dinner.

BREAKFAST BURRITO - Yields 10 servings for less than $1.50 each

WHAT I USED:
Trader Joes - Chile and Onion Flour Tortillas (10pk) $2.99
Trader Joes - Refried Black Beans (2 cans) $.99 per can
Trader Joes - Eggs (14 eggs) $2.99/carton
6 regular sized potatoes - $1.89/bag
1 red onion - $0.79
3 sausages - $4.00 for a 5 pack

THINGS I'M ASSUMING YOU HAVE, BUT WILL NEED TO GET IF YOU DON'T:
Extra Virgin Olive Oil
Black Pepper
Tin Foil
A great attitude

1. Peel 6 potatoes...Rinse them in water...Cut them up into tiny squares...throw them in a pan with some Extra Virgin Olive Oil and Black Pepper and let the frying begin.

2. Lay out 10 tin foil squares, just slightly larger than the tortilla. Lets say...10 inches x 10 inches

3. Put a yummy tortilla on each square.

4. Cut up half the onion and throw those suckers in with the potatoes. Add more oil if necessary and let them start to crisp.

5. Distribute the 2 cans of beans evenly amongst the tortillas. (Pro tip: Use a knife and spread it like butter)

6. Cut up 2 sausages and add it to your epic potato/onion fry

7. Scramble 14 eggs in a separate pan.

8. At this point....all you need to do is distribute the eggs and potato/onion/sausage mix to the tortillas.

9. Folding burritos is an art I haven't quite mastered...but roll it forward and roll it back with tin foil and Wala!

10. Stick it in the freezer... sit back...and reflect on how awesome you are.

LUNCH BURRITO - Yields 10 servings for less than $2 (and you'll have left over ingredients for the next batch)

WHAT I USED:
Trader Joes - Chile and Onion Flour Tortillas (10pk) - $2.99
Trader Joes - Organic Black Beans (2 cans) - $.99 each...$1.98
Trader Joes - Frozen Chicken Breast Tenderloins (1 bag) - $7.49
Trader Joes - Habanero Sauce $2.99 (1 tbsp)
Trader Joes - Red Salsa $1.79 (2 tbsp)
Trader Joes - Shredded Mozzarella (2 cups) $3.79

THINGS I'M ASSUMING YOU HAVE, BUT WILL NEED TO GET IF YOU DON'T:
Paprika
Black Pepper
Onion Powder
Tin Foil
A taste for spicy

1. Dump the entire bag of chicken in a pan...add some water so it cooks nice and juicy. Put the lid on and let it start doing its thing. I cook in on Medium...but the idea is to just get it going while you prep the rest.

2. Lay out 10 tin foil squares...10 inches x 10 inches

3. Put a tortilla on each square.

4. Grab a spoon! Distribute the 2 cans of black beans evenly amongst the tortillas. (I drain it first so the black bean juice doesn't make my burrito soggy. Your call)

5. Add habanero sauce to taste

6. Add shredded mozzarella

7. Add red salsa

8. At this point I drain out the remaining water from the chicken and add in my spices.

9. As the chicken finishes cooking, I'll use whatever kitchen utensil I have (usually spatula) and start cutting up the chicken into smaller pieces up by stabbing it lol . Once it's cooked...add it to the burrito.

10. Roll it up and you, my friend... are done

FAJITA DINNER BURRITO - Yields 10 servings for less than $2

WHAT YOU'LL NEED:
Trader Joes - Chile and Onion Flour Tortillas (10pk) - $2.99
Trader Joes - Frozen Fajita Mix (2 bags) - $2.99 each
Trader Joes - Frozen Chicken Breast Tenderloins (no preservatives no hormones) (1 bag) - $7.49

THINGS I'M ASSUMING YOU HAVE, BUT WILL NEED TO GET IF YOU DON'T:
Black Pepper
Onion Powder
Extra Virgin Olive Oil
Tin Foil

4. Once the chicken is looking 80% cooked...drain the water and add in the fajita mix.

5. I mean this one is super easy...add some oil and spices to taste

6. Distribute evenly...roll it up...and marvel at how you are now the burrito master.

You've made 30 burritos in 30 minutes! Pull it out of the freezer and microwave for 2-3 minutes when you're feeling peckish. REMOVE TIN FOIL FIRST...unless you're looking to set off a fireworks display in your neighborhood.
